I love the salsa at my favorite Mexican restaurant where I live. I set out to copy it but had no idea of the journey ahead. I baked, roasted, grilled, boiled and just about anything else you can think of to do to a tomato. Come to find out that I just needed a can of whole tomatoes. Go figure… A delicious restaurant style salsa that is quick and easy to make. Use on tacos, eggs, grilled fish or anything that needs spicing up.
